Fennel Roasted Sweet Potatoes

Ingredients
- 500 gms of Sweet Potatoes
- 1 bunch of Fennel Leaves
- 3 tbsps of Extra Virgin Olive Oil
- Salt and pepper to taste
INSTRUCTIONS
- Preheat oven to 200 degrees Celsius
- Slice the sweet potatoes about ½ inch wide
- Toss in a bowl with olive oil, salt, pepper and the fennel fronds
- If you’d like a little more heat, you can add some chilli flakes at this time
- Spread on a baking tray making sure there’s no overlap
- Bake for 8-10 minutes
- Remove and turn over
- Bake for 5-8 mins..until golden brown
- Remove and cook on a meshed plate or slotted plate
- Pair with your favourite dip; which in our case was our Vegan Bang Bang sauce & Fermented Chili sauce
